Salad Bar Beef


What is Salad Bar? Salad Bar Beef are cows raised eating only grass and herbs their whole lives. To put it simply, cows are herbivores, and herbivores eat grass and other perennial vegetation. When they eat what they are designed to eat they are healthier and happier, which produces cleaner and more nutrient dense meat. Salad Bar animals take longer to mature and grow, this creates less fat, higher omega-3 fatty acids, and better marbling.


Why Highland and Highland cross?

For us as farmers; they are hardy, easy to work with, docile, good mothers, strong immune systems, and because of their thick coats they handle cold/wet weather well. 

For you as the consumer; Highland beef is known as some of the healthiest meat (actually the best source nest to wild game, even compared to other grass finished animals) available. Because of the thick fur, they do not need a heavy layer of back fat for insulation, this creates meat with an excellent marble and is lean. Due to slower growing and docile temperament, Highland beef has more flavor and tenderness, lower in saturated fat and cholesterol, and is higher in protein and iron than other beef.
